Barrel-Aged Cherry Sour
Get funky with this crimson red beauty. A fluffy base beer aged in French oak wine barrels for nine months. Over time, the barrels and a hand-picked mix of European yeasts worked their magic to give something deliciously dry with notes of oak, red apple, fairy floss, crusty bread and a light farmhouse funk.
We gave this beer a serious sour kick when we added almost 300 grams of sour cherry to every litre of beer.
We then back-blended the aged beer with a fresh brew to mellow the sourness and balance it out. Infinitely complex.
