Morning Glory – Coffee Stout

Morning Glory is big, dark, and unapologetically coffee-led – rich enough for stout lovers, direct enough for anyone who wants their beer to hit like the first cup of the morning.

It pours jet black with a creamy off-white to light tan head, carrying bold aromas of coffee, brown sugar, dark caramel, light raisin and gentle warming booze. Coffee leads hard from the first pour, familiar and unmistakable, backed by a deep malt body that gives the beer weight without turning it syrupy.

On the palate, strong coffee rolls through first, followed by layers of rich malt, brown sugar and dark caramel. A light raisin note adds depth, while controlled roast keeps the beer smooth and rounded rather than burnt or acrid. At 8.8%, it has plenty of warmth and body, but 50 IBU bitterness keeps the sweetness in check, finishing semi-dry instead of sticky.

Built around an extended 8-hour boil and fermented with Mogwai Labs' Burton On Trent yeast, this stout develops colour, richness and depth without leaning too heavily on harsh dark malts. The result is full, smooth and slightly slick, with enough structure to carry the coffee and alcohol while still staying balanced.
